Sweet Lime Yogurt Cake


I have a toddler whose favourite phrase is "i don't want food", translated into the vernacular, of course. His entire diet consists of milk and three different semi-solid foods which he eats day in and day out, with no change in the menu. When people wonder why the mom who dabbles in a food blog cannot get her kid to try a sliver of anything new, without said toddler throwing up his entire last meal; the irony is not lost on me either. As realization keeps creeping in on how unnatural it is for my 2 and 1/2 year old to have never eaten cake, or chocolate, or ice cream (or almost every other food that toddlers take for granted) in his whole life, my enthusiasm for new foods keeps ebbing away. 
But then, in life, new doors open from unexpected quarters. My sister's son turned a year old last week, and thankfully, he was a normal kid not averse to trying out new foods. It was the perfect opportunity to wake up the hibernating baker inside me. So i plunged into the opportunity with much abandon. It felt great to get back into action and accomplish a little something. And the best evidence of the cake's success came when it was polished off by the little one's parents and grandparents within minutes after the birthday boy had his first taste. Delighted me!

No Bake Eggless Mango Cheesecake - Indian version

This will make people go wow and firmly establish you as a great home cook. This mango season and you need to quickly find an excuse to make this. So you can make it a few more times before the season ends. And once you do, you might want to grab as many mangoes as you can and stuff your freezer with them, so you can make it again and again throughout the year. Considering how great this looks with minimal effort, this is sure to become your fall-back item for parties, celebrations or potlucks. You may even want to invent a few celebratory events. The toddler didn't fall flat on his face today. Yay! Let's have cheesecake.

My first party with homemade snacks

We don't get many visitors at my home. When they do come, they don't stay long. When they do stay its usually unplanned and with no time to cook a meal at home. We'd suddenly realise it was dinner time and order some biryanis. And this was never for more than four people. You can now safely assume that i don't have much experience in entertaining people at my home. You can also probably imagine how tensed i was when i had to host a pre-planned snacks party for eight and it was expected that whatever was served would be made by me.

Fresh Strawberry Cake for my wonderful neighbours

I have wonderful neighbours. They love my cake. This one woman especially, who has a big sweet tooth, always sends me a message telling me how much she likes my cake after every new experiment. And then praises it again when she sees me in the balcony. She's half my inspiration for trying out new cakes, including this. So i 've made friends with this set of women who live in the apartment block next door and they were planning a potluck to celebrate New Year's Eve. I was told about it, invited, then reminded and persuaded to also attend. While i declined giving all sorts of excuses that included the in-laws, the husband and the little one; i still could not throw away an opportunity to share my 'apparently famous' cake baking skills.

Because there was cake

Yes, birthday cake! My son's first birthday cake! No i didn't bake. I just ate. Lots of it. More than i should if i were sane. But it was a birthday cake, and i am supposed to eat my little one's share too, right? Right?

I know i have been completely absent from the blog this year and mostly absent last year too. I wanted at least one post to show in the archives against 2013, so hurriedly typing this up before i am too late and the year whizzes past me before i can take notice. And i am now truly amazed by new moms who have been doing fabulous work to keep their blogs active.

Fresh Pineapple Upside Down Cake

It's not that all i do is bake cakes. Its just that baking cakes gets me excited enough to come here and leave a record of it. And so a couple of months after my last post i come back here to talk about another new cake i baked and how good it turned out. This was my first attempt at baking the much famed pineapple upside down cake, my first attempt at making caramel and i had absolutely no expectations about this whole attempt resulting in an actual cake. I had lots of hopes of course, but no real expectations. I was prepared for a gooey mess that would fall apart when taken out of the cake mould and was then delighted with the perfect colour and shape of the entity that proudly stood in front of me at the end of 45 minutes in the oven.

Healthy Carrot Cake for a birthday

I have been MIA (been so eager to use that word) and will stop trying to justify my absence. You are used to my apologies by now, aren't you? Its just that i have been lazy and uninspired. You know, that realisation that i am adding nothing to this blog by talking about what i eat. Then again i read recently in another blog's comments that the purpose of a blog is to write and not about others reading it, that's what inspired me to finally make a comeback and put my thoughts out here.
What i would like to remind myself today is that i have started out on this mission of trying out new foods and documenting the results here a year ago and it has been a fulfilling experience, especially when not much else was happening in life. Not only have i cooked up new foods that i would otherwise not have, but i would like to think that i brought happiness to people along the way with my baking experiments. So in keeping with the tradition, i baked a healthy carrot cake for my mother-in-law's birthday last week.

This Flower is a Chocolate Cake - Black and White Wednesday

I can't believe its Wednesday again, already! Time for another black and white Wednesday and i have not done a single recipe post since the last one. What can i say, i have been busy and time flew. To give you some context - My dad retired from his job last month after having completed almost thirty five years of service. He had a single employer all his life, the state government. Those were the days when private employers weren't big in India and a young man was deemed eligible for marriage only if he had a government job. And so he kept at it for the better part of his life, where colleagues became family friends.
And when he was throwing these friends a farewell party at the end of last month, i couldn't be with him on his big day because i was going to spend it with my in-laws celebrating the festival of Ganesh Chaturthi. I can't even type this without feeling extremely guilty about it. My way of making amends (to myself, mostly) was to visit my parents a week later, and bake my dad some sweet goodies. My dad has a sweet tooth (a huge one) and loves everything sweet. So, i baked him this chocolate cake, another orange chocolate chunk cake, a bunch of peanut butter cookies (that were promptly shared with some of his now ex-colleagues) and a larger bunch of wholewheat oats cookies (the recipe will come soon).
The recipe for this chocolate cake is the same as the one i have posted in June and have referred to in many posts since then, it has become a family favourite. What's new about today's post is that i got myself a new silicone cake pan recently that is the shape of a flower and i have baked all my cakes in it since then, i had to share with you. Today i am traveling back to Hyderabad and once i settle down, hopefully the recipe posts will start coming soon. Oh yes, i have been clicking photos of mom's dishes in the kitchen the last few days - you will have to wait a little more to see them.

Orange chocolate chunk cake/ Birthday Cake

My blog turned 1 month old on July 6th and i got invited to my nephew's birthday party who turned 8 on the same day. I couldn't have been happier to get this wonderful opportunity to bake a birthday cake! I wanted a cake that could hold its own without icing and was rich enough for a birthday kid. This was one cake where i wasn't going to substitute the usual low fat vegetable oil in place of butter. No, it was going to be rich, creamy butter all the way.

Easy Chocolate cake with cocoa

I never even dreamed that baking a chocolate cake could be so easy until the time i actually did it. And then i had to kick myself that it took me so long. Really? why did nobody tell me before? You tried, huh? I just didn't hear it. I will surely try  harder to keep  my ears open next time.
Bored one day of watching repeats of "Food Paradise" on TLC, I started reading through blogs and suddenly noticed all these people who were not cooks until they got married and how so many seemed to be baking cakes with ease. So i decided it was time for me to try it too. A decision i will never regret. And once this decision was made all the required ingredients magically made their appearance in the supermarket aisle. OK, you guessed it right, i just never noticed them before when they were right in front of my eyes. A case of you only see what you want to see. They say that once you buy a car or intend to buy a car, you start seeing the same model and colour everywhere! Right, right, I am going off the topic. In my defense, i am new to this - writing about a single topic.
Let me start again, if you even remotely like chocolate you simple have to give this a try. You don't need frosting to make it taste good, you can serve it warm or cold and it will keep for a week in the refrigerator.
